Canape

What is Canape?

Dinner Function

Hello! Miss me hah? Hehehe. Just kidding. Last night we have a special function at Tiffins. So we cooked a course set dinner to the guest. Well when come to this kind of function everybody will get busy. For me I still act as usual.

Last night I cooked Chicken Breast with Mash Potato and Mushroom Sauce to them. I got to do everything very fast because we need to prepare about 40 set dinner. Can you imagine?

Another Dessert

I feel very lucky. Why? Even though I'm still new, i got the opportunity to learn great recipes from fantastic chef. Yesterday, I felt glad cause I learn another dessert – Bread Butter Pudding and Chocolate Mousse.

Hunter's Box

Hi everyone. I feel very excited this week. Lot of ideas come through my mind. As I promised yesterday, today I'll show you one of the main course that available in Tiffins. It is a Hunter's Box. This box actually contains two dishes but you have to choose only one either Teriyaki Cod or Chicken with Soba Noodles.

This is Teriyaki Cod. It is really delicious. Sorry no recipe at this moment. I hope you enjoy!

Lime Granete

Hi everyone. Salam Ramadhan. Less work so I got time to create something. Today I will like to show something. Not a creation but something that I learned at Tiffins. We call it Lime Granete. It's like an ice blended. Sometime we use other flavour such as Rapsberry.



Normally we served Granete in between starter and main course. But of course it's still depends on the customer. Sometime they like it to be in between but sometime doesn't. Anyhow I hope you enjoy and see ya!

Night At Batu Ferringhi

Hi everyone. How are you getting on? My life become very busy cause of middle east seasons. I don't really have time for break. Last week, I learned how to prepare Tapas. It's quite easy for me. Just need a little creativity in order to add extra look.

New Reading Material

Last week I received a book from my friend. Actually I really want a book something like this. It's a 'Sauces, Salsas & Dressings'. Since I work in a fine dining restaurant, i need to be update with all the techniques and methods. Thanks to him.



It's been almost one month I work here. Lot of thing to catch up and it gives me great experiences working with great people such as my superior, Max. He teaches me step by step. (FYI I don't have any experience in western cooking).

My New Territory

Hi everyone! It is been so long and I already started working about one week now. At first I was placed at Tamarind Brasserie and then being transfer to the fine dining restaurant called Tiffin Restaurant.
I am happy over here and a lot of thing I have to catch up very fast. Thank God I got a very humble and experienced Chef who willing to give all his knowledge to me. I am very honoured.

Final Creation

It seems like I do not have time to manage both blog. So Im planning to combine it back together. So only this blog is official. I'll put back my all my recipes into this blog.

Now I would like to concider this is my finale creation in Ipoh. Will continue to give more creative idea in Penang soon. I prepare this for my General Manager and his guests this afternoon. I called it Grilled Black Pepper and Butter Prawn Fried Rice.

A Dedication To All Of You

Hi everyone. Finally I got the ample time to write something. Well I know now it is the World Cup season. I am sure most of you love to watch the match. Even I also try to spend my time watching some of my favourite team such as Brazil, England, Italy, and Argentina.

Actually last night I managed to to my new creation based on watermelon. This is my first trial carving this design. I know i need sometime to master the technique. So feel free to leave some comments.

Watermelon

Wow! It's been quite sometime. When I looked at my blog I noticed that I update nothing. So with the time that I have today I would like to share with you a watermelon that I carved not too long ago.

Actually my housemate bought the watermelon for me to carve. He been so suportive all this while. This creation took me 4 hours to finish. So I hope everyone like it.

What a Spaghetti!

This is another one. My housemate asked me to cook something for dinner for him. Very menyusahkan. But since he helped me a lot so I didn't mind preparing something simple yet delicious. So I looked around at my kitchen and noticed there was spaghetti in the jar. And I still remember that I bought Dowry Fish from Giant last two days.
So my mind started processing... Finally I got the idea but my food taster said it quite hot. However those who like it hot (spicy) you can follow my recipe. I give you Fried Spaghetti with Dowry Fillet.


Ingredients:
1/2 packet of spaghetti
2 pieces dowry fillet (sliced)
1 Onion (peel & sliced)
1 clove of garlic (peeled & finely chopped)
Capers
Chilli sauce, Chilli paste
Salt, Black pepper, Mix herbs
Olive oil
1 handful of grated Parmesan Chesse


Methods:
Boil the spaghetti in the hot water about 20 minutes.
Fry the dowry with some olive oil until crispy. Then put a side.
Fry the onion and garlic in a little olive oil until lightly golden. Put in chilli sauce and chilli paste. Continue to fry. Add the spaghetti. Then dowry fillet and capers.
Serve sprinkled with mix herb, black pepper and grated Parmesan cheese.



New Recipe

I managed to create something simple last week. Actually the ingredients was the only thing that I could get in my fridge at home. As usual my housemate would be the food tester even tough sometime he did not know how to give comment on my cooking.
Well here it goes... the Simple-Left-In-The-Fridge-Ingredient-Soup. I hope you enjoy the recipe.
Ingredients:
Chicken Meatball
Carrot (sliced)
Baby Tomato
Celery (sliced)
Red Capsicum (sliced)
Onion, Garlic, Ginger (sliced)
Chicken Stock
Black pepper
Salt
Oil
Water

Method:
Fry the onion, garlic and ginger in a little olive oil until lightly golden. Add the carrot, celery, red capsicum and baby tomato. Continue to fry. Add some water. Add chicken meatball. Season with black pepper and salt. Finally, add chicken stock.

A Special Treat

Last 2 weeks, I gave my friends a very special treat. Actually I just wanted to share my happiness as I'd been promoted to a new position in my department. Of course my housemate played the major role as the host and he sent out e-mail to our friends.
I prepared special noodle. I got the idea from Kylie Kwong TV Programme in Channel 11. So I called Noodles in Vegetables Gravvy. Everyone was so happy.


Sumptious Tea Break

Last Wednesday, Marketing Department hosted a Tea Break for journalists from Yeah Magazine. So I was asked to come out with an interesting menu. First thing came out from my mind was fried meehoon. But I haven't think on how to cook them. I went back home and told my housemate - he is from Marketing Department, I wanted to prepare fried meehoon. He said what a coincident. The journalists love to eat fried meehoon.
Finally I got the idea and my creation called Fried Meehoon with Shitake Mushroom and Kalamari.

Fruity Fruit

Still got time to post new entry? Yeah! This was for our big boss who came to his boat house. He organised a party so I decided to come up with something... a fruity plate. I carved a papaya. Very simple one and I stuffed the papaya with grapes and leaves. I felt so happy as I can show my creation to everyone.

Another Creative Idea

Well enough about that. Today I want to show you a photo of another creative idea that came across my mind. I made this for my colleague, Ashraf. I carved one watermelon and two papayas with free of charge. For me money is not priority in doing this.
